Hot German Potato Salad is filled with savory bacon flavor and a sweet vinegar dressing. I think it is a great side dish for Ham, Pork Chops, Pork Roast, or Ribs.
For This Recipe You Will Need…
- 8 cups COOKED, sliced Potatoes
- 1 cup diced Bacon (1 pound)
- 1 cup diced Celery
- 1 cup chopped Onion
- 3 teaspoons Salt
- 3 tablespoons Flour
- 2/3 cup Sugar
- 2/3 cup Vinegar (I sometimes cut this in half, personal preference)
- 1/2 teaspoon pepper
- 1 1/3 cups water
You can cook your potatoes how ever you’d like. I use my Instant Pot. Peel (or leave unpeeled) your potatoes. I used russet potatoes, but red potatoes would work wonderfully as well! If using the Instant Pot, place 1 cup water in the bottom of your pot. Stack up your potatoes on a trivet. Cook on High Pressure for 13 minutes, Quick Release pressure. Then slice your potatoes.
You can slice your potatoes before cooking if you want. If using the Instant Pot it should only take about 4 minutes on High Pressure, followed by Quick Release.

You can also boil or fry your potatoes if you prefer!
Chop up your bacon and fry in a large pan on the stove top. Keep about 1/4 cup of the bacon grease!! This will add more of that delicious bacon flavor to your dish.
Add the celery, onions, salt, pepper, and flour to your bacon. Cook gently for about 1 minute. Add sugar, vinegar, and water. Bring this mixture to a boil. Turn off heat!
Add your cooked potatoes to this mixture and toss gently to coat the potatoes with the “dressing”. Transfer your Hot German Potato Salad to a 9×13 inch baking dish. Cover with aluminum foil.
Preheat your oven to 350 degrees and bake for about 45 minutes.
Crock Pot Method
Instead of transferring to a baking dish, transfer to a crock pot!! Stick it on Low for 1-2 hours until you are ready to eat!

Ingredients
- 1 cup diced bacon 1 pound
- 1 cup diced celery

- 2/3 cup vinegar or less to taste
- 1/2 tsp pepper
- 1 1/3 cup water

Instructions
- Fry bacon, keep 1/4 cup bacon grease. Drain the rest.
- Add celery, onions, salt, pepper, and flour to your bacon. Cook gently, 1 minute.
- Add sugar, vinegar, and water. Bring to boil. Turn off heat.
- Add cooked potatoes to the mixture. Toss gently to coat.
- Transfer to 9×13 baking dish. Cover with aluminum foil.
- Preheat oven to 350 degrees. Cook for about 45 minutes.
- Crock Pot Method – Instead of baking dish, transfer to crock pot. Set to Low for 1-2 hours.
