Pot Roast in the Instant Pot has become my all-time favorite method for cooking it. Pressure cooking roast makes it amazingly tender and holds all the moisture. No more tough, dry pot roast for us!

You will need an Instant Pot Pressure Cooker to make this recipe. I use the Instant Pot DUO 8qt (affiliate link) and LOVE IT!!

Searing Your Roast

Thaw your roast before beginning. If you want to season your roast now is the time. I am not seasoning my roast. Next, you will want to sear your roast. Searing all sides of your roast will prevent the natural juices from escaping. You can use your Instant Pot to sear the roast by using the “Saute” function. Put a couple tablespoons of vegetable or olive oil in the bottom of the pot & press the “Saute” button. Give it 1-2 minutes to heat up. Sear each side of the roast for 1-2 minutes, including the ends!

Pressure Cooking Your Roast

Now you are ready to pressure cook your roast. Turn off the saute function and add 1 cup of water to the pot. Use a spatula to scrape up those yummy bits of cooked roast on the bottom.

Lay your roast flat on the bottom. If it doesn’t fit perfectly, that is okay. Secure your Instant Pot lid. Set the valve to “Sealing”. Press “Manual” and increase your cook time to 90 minutes. It will likely take 10-15 minutes for your Instant Pot to come to pressure before it begins counting down the 90 minute cook time. Let it NPR for at least 10 minutes before QR. You can let it do a full NPR if you’d like.

  • Pressure Cooker
  • Tongs or Spatula

Ingredients
  

  • 3 Lb Chuck Roast
  • 2 Tbsn Oil
  • 1 Cup Water

Instructions
 

  • Heat oil in pressure cooker using the Saute function.
  • Sear roast on all sides for 1-2 minutes.
  • Turn off Saute function and Add 1 cup water to the pressure cooker.
  • Lay the roast at the bottom of the pressure cooker, secure lid, and move valve to Sealing.
  • Press Manual and set cook time to 90 Minutes. Make sure the High Pressure light is on.
  • After the 90 Minutes is complete, allow to NPR for at least 10 minutes before QR.
  • Serve with Potatoes & Carrots. Make gravy with the broth. (optional)
