Hot German Potato Salad

Hot German Potato Salad is filled with savory bacon flavor and a sweet vinegar dressing. I think it is a great side dish for Ham, Pork Chops, Pork Roast, or Ribs.

Equipment

  • frying pan
  • 9x13 baking dish
  • Aluminum Foil

Ingredients
  

  • 1 cup diced bacon 1 pound
  • 1 cup diced celery
  • 1 cup chopped onion
  • 3 tsp salt
  • 3 tbsn flour
  • 2/3 cup sugar
  • 2/3 cup vinegar or less to taste
  • 1/2 tsp pepper
  • 1 1/3 cup water
  • 8 cups cooked, sliced potatoes

Instructions
 

  • Fry bacon, keep 1/4 cup bacon grease. Drain the rest.
  • Add celery, onions, salt, pepper, and flour to your bacon. Cook gently, 1 minute.
  • Add sugar, vinegar, and water. Bring to boil. Turn off heat.
  • Add cooked potatoes to the mixture. Toss gently to coat.
  • Transfer to 9x13 baking dish. Cover with aluminum foil.
  • Preheat oven to 350 degrees. Cook for about 45 minutes.
  • Crock Pot Method - Instead of baking dish, transfer to crock pot. Set to Low for 1-2 hours.
