Green bean casserole in the Crock Pot or Slow Cooker is my go to recipe for holiday gatherings.

To be honest, I used to HATE Green Bean Casserole. Green beans mixed with Cream of mushroom soup just did not seem appetizing to me. Then I tried this recipe and LOVED it! I think it is the tangy sour cream and cheese that really make this recipe stand out.

I converted this recipe to using a Crock Pot because you don’t want your side dish to get cold and you don’t want to ask your host if you can use their oven when they are already cooking a dozen things, right?!

How I make it…

Making a Roux

What Is a Roux? – A Roux is flour and butter (or other fat) cooked together to thick sauces.

Gather your ingredients because this first part goes rather quickly and you don’t want to leave the stove.

  • 3 Tablespoons Butter
  • 2 Tablespoons Flour
  • 1 Teaspoon Sugar
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper

Use a medium sauce pan on your stove at medium heat. Melt the butter in the pan. Quickly add the flour, sugar, salt, and pepper. Stir constantly for about 1 minute. Remove from heat.

Mixing the Sauce

Once you’ve made the roux and removed it from your heat source. It is time to create the sauce.

  • 1 Cup Sour Cream
  • 1 Tablespoon Dried Minced Onion

Add the sour cream and dried minced onion to the roux. Stir and mix well.

Finish it up

Now it is time to throw it all together and get it into your Crock Pot.

  • 2 (14.5 ounce) Cans Green Beans – I prefer Cut Green Beans
  • 1 Cup Shredded Cheese – I used Colby
  • 1 Cup French’s Crispy Fried Onions

Drain the canned green beans and add them to your sauce. Add HALF of the shredded cheese and HALF of the French’s Crispy Fried Onions. Mix ingredients well.

Green Bean Casserole Crock Pot Side Dish

Throw it into your Crock Pot. A 2 qt Crock Pot should work perfectly. Top with remainder of shredded cheese and crispy fried onions.

Cook on LOW for about 2 Hours.

  • 2 qt Crock Pot
  • Medium Sauce Pan

Ingredients
  

  • 3 Tbsn Butter
  • 2 Tbsn Flour
  • 1 tsp Sugar
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 Cup Sour Cream
  • 1 Tbsn Dried Minced Onion
  • 2 14.5 ounce can Green Beans drained
  • 1 Cup Shredded Cheese
  • 1 Cup French's Crispy Fried Onions

Instructions
 

  • Melt butter in medium sauce pan over medium heat.
  • Quickly add flour, sugar, salt, and pepper.
  • Stir constantly for 1 minute to create a roux.
  • Remove from heat.
  • Add sour cream and minced onion to the roux. Mix well.
  • Add green beans, half of the cheese, and half of the crispy fried onions. Mix well.
  • Transfer mixture to the crock pot.
  • Top with remaining cheese and crispy fried onions.
  • Cook on LOW for 2 hours.
